Salmon in Sauce Provencal!
Keeping with my New Years resolution I have been making an effort to cook more regularly and this recipe also coincides with my travel planes, as cuisine straight from the South of France, adjacent to Italy- so the taste is rather Italian with a rich, tomato-based sauce.
I started by frying up some onions and garlic and then the salmon fillet.
Next I needed to make the mixture for the sauce: 1/2 a cup of basil leaves, 1 can of diced tomatoes, 1/2 a cup of tomato paste and 1/4 cup of white wine vinegar. This mixture, however, has contributed to my resolution to purchase an apron. Lesson learned; tomato stains and it smells!
Next I simply added the sauce into the pan and stirred for about 10 minutes. Once the salmon was done, I removed it from the pan and added in the side dish of asparagus. That took about five minutes to cook and then it was all done!
This meal only took me about 15-30 mins to complete. So I now feel pretty reassured about my resolution to stay home and cook. Getting this meal and drinking a cocktail on the town would have cost me around 50 bucks, which is crazy considering how easy it is to do it at home!
