Blueberry and Coconut Pancakes


As a child I remember waking up to the smell of Mum’s pancakes on weekends. The sweetness would drift through our home and we would wake with smiles. Twenty years on and the same smell tickles my nose and taste makes me smile.

This Valentine's Day spoil your sweetheart with a batch of these delicious home-made pancakes and watch the smiles and love grow.

2 cups Self Raising Flour

1 cup sugar (you can add more if you or your sweetheart have a real sweet tooth)

1 egg

1 1/2 cups milk (add less or more milk depending on the consistency you would like)

1 tsp vanilla essence

Butter (for cooking and coating your spatula to flip pancakes)

Fresh blueberries

Desiccated coconut


Step 1: Sift flour in to mixing bowl

Step 2: Add sugar, egg, vanilla and milk. Mix well.


Step 3: In a medium sized frypan place a teaspoon of butter and turn to medium heat, ready to cook your delightful pancakes.

Step 4: Combine fresh blueberries and desiccated coconut into batter. You can add as many blueberries and as much coconut as you like. I added 1 1/2 punnets of blueberries and a generous handful of coconut.

Step 5: Using a large spoon ladle mixture into your pre-heated frypan.

Step 6: Flip pancakes over once the batter has bubbled.


Step 7: Cook for another minute or two then place pancakes on a cooling rack. Your pancakes should be a golden brown colour.


Step 8: Serve up your delicious pancakes with some fresh fruit (I chose strawberries and blueberries), maple syrup and icing sugar. Enjoy, smile and laugh and enjoy Valentine's Day.
